Kristen Totino, MS, RDN, LDN
District Dietitian
Kristen has a Bachelor of Science in Nutrition/Wellness from Auburn University and a Master of Science in Nutrition from Case Western Reserve University. Her passion is to help individuals manage GI disorders such as Celiac Disease/IBS and food allergies. She is also a resource to help students meet exercise and nutrition goals while navigating the dining halls on campus.
Jessica Airola, MBA, RDN, LDN
Regional Dietitian
Jessica has a Bachelor of Science in Dietetics/Nutrition, Fitness and Health from Purdue University and a Master of Business Administration from Dominican University. She holds a Certificate of Training in Treating Gluten-Related Disorders.
Dietary Accommodation Policy
Students with special dietary needs are expected to communicate their dietary restrictions and requirements to the Office of Accommodations. If your restriction requires exclusions not included in our Simple Servings station and normal menu offerings, the Office of Accommodations will contact Dining Services to meet one-on-one with the student to ensure we’re able to meet the dining needs of that individual to provide a safe, delicious, and social dining experience.
We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through the Everyday app. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs.
College is complicated enough; enjoying a meal at the resident dining hall shouldn’t be. But choosing meals can present undue anxieties for the growing number of students who are arriving on college campuses with food allergies that can be dangerous—even fatal. According to the Centers for Disease Control and Prevention, teenagers and young adults with food allergies are at the highest risk of fatal food-induced anaphylaxis.
All foods offered at the Simple Serving station are naturally free of milk, eggs, wheat, soy, shellfish, peanuts, sesame, tree nuts and gluten. Straightforward preparation techniques assure transparency of ingredients, and help student prepare to be responsible for their own shopping and cooking in future. The lunch and dinner menu change daily and include varied protein options: fish, beef, pork, chicken and turkey. All side dishes are vegan, containing no milk, eggs, or meat products.

Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!
Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon on the Everyday app to indulge in the healthy and delicious items offered at each meal.
